ASPECT AND DESCRIPCION According to VAVILDV it is originating of America tropical, Central America and principally Mexico, in which can be found the majority of the wild species of the Capsicum genera; also it is located along the Andes from Mexico to the northwest of the Argentine republic. The pepper is an annual plant that reaches between 30 and 80 cm high although can be seen samples of until 2m. The leaves are colored intense green of oval form. The flowers are hermaphrodite with tapeworms or in small racemes. The fruit, that is the party that is consummates, is a bay form of hollow, size and varied color.

CULINARY USE The flavor fruit very particular is very used in gastronomic. The so much red dehydrated scales as green are used, previously rehydrated, in sauces that are fried or not; in inlaid fillings; to accompany white meats or red, accompanying vermicelli, rice and even salads.
